Tomato-Basil Wrapwich
- Mayonnaise
4 fajita-size flour tortillas or basil flavored tortillas
2 cups arugula or torn romaine lettuce leaves
2 plum tomatoes, cut into wedges
12 small slices fresh mozzarella cheese (about 4 ounces)
8 large basil leaves
Italian salad dressing
- Squeeze it: Squeeze mayonnaise
generously onto tortillas.
- Stuff it: Layer argula,
tomatoes, cheese and basil down center of each tortilla. Drizzle
with dressing.
- Wrap it: Roll and fold
the filled tortilla.
Makes 4 servings.
