Southwestern Chicken Salad Sliders

Southwestern Chicken Salad SlidersThese bite sized sandwiches are fun and easy to make, and are a definite crowd pleaser.

Recipe Ingredients:

1 precooked rotisserie chicken, deboned and coarsely chopped
1 bunch green onions, chopped
1 cup frozen corn, thawed
1 cup cherry tomatoes, halved
2 Hass Avocados
1/2 cup sour cream
1/2 cup mayonnaise
1/2 teaspoon garlic salt
12 bakery rolls, for sandwiches

Cooking Directions:

  1. In a large bowl, combine chicken, green onions, corn, sour cream, mayonnaise and garlic salt. Mix thoroughly.
  2. Cube 1 1/2 avocados, slice remaining 1/2 of avocado. Gently fold avocados into the chicken mixture, and season with salt and pepper.
  3. Chill in the refrigerator 1 hour
  4. To Serve: Slice dinner rolls in half. Fill with chicken salad and top with avocado slices.

Makes 12 sliders.
