This light sandwich will
become a lunchbox favorite. Tender turkey breast, ripe tomatoes
and crisp romaine lettuce piled high on whole wheat bread makes
an easy lunch or light supper.
The Classic
Turkey, Lettuce and Tomato Sandwich
- 8 sliced whole wheat bread,
lightly toasted
4 tablespoons mayonnaise
4 tablespoons Dijon mustard
8 (1-ounce) slices turky breast
2 tomatoes, sliced 1/4-inch thick
- 8 romaine leaves
Salt and freshly ground black pepper to taste
- Spread the mayonnaise
and mustard on the toasted bread. Divide the turkey slices; top
with tomato slices and romaine leaves. Season with salt and pepper.
Makes 4 servings.
