A cool and refreshing fruit sauce with a hint of a fiery tease from the crushed dried red pepper. Delicious served with pork, poultry and lamb entrees.

Fresh Peach Chutney

4 large ripe peaches, peeled and coarsely chopped
1 medium tart green apple, peeled, cored and finely chopped
1/4 cup finely chopped white or red onion
2 tablespoons honey
2 tablespoons fresh lemon juice
2 tablespoons chopped red bell pepper
2 tablespoons chopped green bell pepper
2 teaspoons finely minced fresh ginger
1 teaspoon grated lemon peel
2 cloves garlic, finely minced
1/4 teaspoon crushed dried red peppers (or to taste)
1 dash kosher salt
 
  1. Combine all ingredients in a nonreactive bowl, mixing gently, but well. Chill for 2 or more hours to allow flavors to blend.

Makes about 4 cups or 16 (1/4 cup) servings.
