Ginger-Apricot Glaze

1 cup apricot preserves
2 tablespoons lime juice
1 tablespoon soy sauce
1/2 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
1/8 teaspoon ground red pepper
  1. Combine all ingredients in a medium saucepan. Cook and stir until bubbly. Use immediately or cool, cover, and refrigerate for up to 5 days. Brush on beef, pork, or poultry the last 5 minutes of grilling.

Makes about 1 cup (6 servings).
