Gingered Blueberry Sauce

No recipe image available.Spoon this gingered blueberry sauce over desserts such as ice cream, bread puddings or cakes—or use as an accompaniment with grilled chicken, pork or seafood.

Recipe Ingredients:

1 cup apple juice
1 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon ground ginger
1 (2-inch) cinnamon stick
2 (12-ounce) packages frozen blueberries

Cooking Directions:

  1. In a saucepan combine apple juice, sugar, cornstarch, and ginger. Heat and stir until the sugar dissolves. Add 1 cinnamon stick and bring to a boil. Add frozen blueberries. Reduce the heat to medium and cook for 12 to 15 minutes, or just until the mixture returns to a boil and thickens, stirring occasionally. Remove the cinnamon stick before serving.

Makes about 4 cups.
