Gingered Blueberry Sauce

1 cup apple juice
1 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon ground ginger
1 cinnamon stick
2 (12-ounce) packages frozen blueberries
  1. In a saucepan combine apple juice, sugar, cornstarch, and ginger. Heat and stir until the sugar dissolves. Add 1 cinnamon stick and bring to a boil. Add frozen blueberries. Reduce the heat to medium and cook for 12 to 15 minutes, or just until the mixture returns to a boil and thickens, stirring occasionally. Remove the cinnamon stick before serving.

Makes about 4 1/2 cups.
