Jamaican Jerk Rub

2 teaspoons granulated sugar
1 1/2 teaspoons onion powder
1 1/2 teaspoons dried thyme, crushed
1 teaspoon ground allspice
1 teaspoon ground black pepper
1/2 to 1 teaspoon ground red pepper
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
  1. Stir together the sugar, onion powder, thyme, allspice, black pepper, red pepper, salt, nutmeg, and cloves in a small bowl.
  2. To use, sprinkle mixture evenly over meat; rub in with your fingers. Store in a tightly covered container.

Makes about 8 teaspoons (enough for about 4 pounds of pork, chicken, or seafood).
