This dark, sweet relish -- made with caramelized, slow-cooked onions, sweet raisins, and tart apricots -- is a wonderful accompaniment to roasted meats or root vegetables.

Onion-Apricot Confit

1 tablespoon butter
2 medium onions, sliced
4 ounces raisins
4 ounces dried apricots, chopped
1 cup beef broth
1 tablespoon packed brown sugar
1 1/2 teaspoons cider vinegar
1/4 teaspoon ground ginger
  1. Melt butter over medium-low heat in heavy saucepan; add onions and cook for 20 minutes or until soft and starting to brown, stirring occasionally.
  2. Stir in raisins, apricots, broth, sugar, vinegar and ginger. Cover, reduce heat to low and simmer, stirring occasionally, for 20 minutes or until fruit is soft.
  3. Chill; serve as a relish with meats.

Makes 8 servings.
