This dark, sweet relish -- made with caramelized,
slow-cooked onions, sweet raisins, and tart apricots -- is a
wonderful accompaniment to roasted meats or root vegetables.
Onion-Apricot Confit
- 1 tablespoon butter
2 medium onions, sliced
4 ounces raisins
4 ounces dried apricots, chopped
1 cup beef broth
1 tablespoon packed brown sugar
1 1/2 teaspoons cider vinegar
1/4 teaspoon ground ginger
- Melt butter over medium-low heat in heavy
saucepan; add onions and cook for 20 minutes or until soft and
starting to brown, stirring occasionally.
- Stir in raisins, apricots, broth, sugar,
vinegar and ginger. Cover, reduce heat to low and simmer, stirring
occasionally, for 20 minutes or until fruit is soft.
- Chill; serve as a relish with meats.
Makes 8 servings.
