Pit Barbecue Sauce
A sweet and tangy, Kansas City-style tomato-based barbecue sauce. Apply during the last few minutes of grilling to prevent the sauce from burning due to the sugar content.
Recipe Ingredients:
3 tablespoons vegetable oil
1 medium onion, finely minced
2 cloves garlic, peeled, crushed
2 cups ketchup
1 cup apple cider vinegar
1/2 cup brown sugar, firmly packed
2 teaspoons kosher salt
1 teaspoon ground black pepper
1/2 teaspoon liquid hot pepper sauce (or to taste)
Cooking Directions:
- Heat oil to a medium saucepan over medium-high heat; add onion and garlic and sauté until onion is tender. Add remaining ingredients and bring to a boil. Reduce heat to simmer and cook for 10 minutes or until slightly thickened. Remove from the heat, and cool.
Makes about 2 cups.
