Pit Barbecue Sauce

3 tablespoons vegetable oil
1 medium onion, minced
2 cloves garlic, peeled, crushed
2 cups tomato ketchup
1 cup apple cider vinegar
1/2 cup packed brown sugar
2 teaspoons salt
1 teaspoon ground black pepper
1/2 teaspoon liquid hot pepper sauce, (or to taste)
  1. Heat oil to a medium saucepan over medium-high heat; add onion and garlic and sauté until onion is tender. Add remaining ingredients and bring to a boil. Reduce heat to simmer and cook for 10 minutes or until slightly thickened. Remove from the heat, and cool. Use as a basting sauce for grilled meats.

Makes about 2 cups.
