Zest and spicy, filled with herbs and enriched with honey and pecans this Spiced Barbecue Sauce is a wing-ding prepartion certain to please the folks on your patio. Cook it up, baste your meats generously and have a great time!
Spiced Barbecue Sauce
- 1 1/2 teaspoons ground black pepper
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon ground white pepper
1/2 teaspoon cayenne pepper
1/2 pound bacon, chopped
1 1/2 cups onions, chopped
2 cups chicken broth
1 1/2 cups chili sauce
1 cup honey
3/4 cup chopped pecans
1 orange, peel sliced off and reserved, juice reserved
1 lemon, peel sliced off and reserved, juice reserved
2 tablespoons minced garlic
1 teaspoon liquid hot pepper sauce
4 tablespoons butter
- Combine pepper, salt, onion powder, garlic powder, white pepper and cayenne pepper in a small bowl; set aside.
- Cook chopped bacon in a large, deep saucepan or a deep stockpot until crisp; drain and discard excess fat. Add chopped onions, cover and continue cooking until onions are brown (8 to 10 minutes), stirring occasionally.
- Stir in pepper mixture; cook about 1 minute. Add chicken broth, chili sauce, honey, chopped pecans, orange, juice and peel, lemon juice and peel, garlic and liquid hot pepper sauce.
- Reduce heat, cook on low for about 10 minutes; stirring frequently. Remove orange and lemon peels; continue cooking for another 15 minutes. Add butter; stir until melted. Cool. Process in a blender or food processor until smooth.
Makes about 6 cups.
