Baked Cod Fillets with Herbed Crust

Recipe Ingredients:
2 slices bread or roll, cut into cubes
2 teaspoons chopped fresh flat-leaf parsley
2 teaspoons chopped fresh dill
1/2 teaspoon minced garlic
2 plum tomato, seeded and chopped
2 large eggs, beaten
2 tablespoons melted butter, plus more for brushing
2 (6-ounce) cod fillets
Salt and ground black pepper to taste
Cooking Directions:
- Preheat oven to 400°F (205°C).
- Place the cubed bread, parsley, dill, garlic and tomato in a bowl, season with salt and black pepper. Add the beaten eggs and 2 tablespoons butter and mix in well.
- Brush the cod fillet with additional melted butter, season with salt and pepper. Arrange a portion of the bread mixture on top of each fillet and secure it in place.
- Bake for about 15 minutes, or until the fish flakes.
Makes 2 servings.
