The flavor of this dish
will depend on the type of olives you choose to use. Serve with
rice and steamed vegetables for a light dinner.
Baked Cod
with Olive-Lemon Butter
4 (6-ounce) cod filets
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons chopped kalamata olives
2 tablespoons butter, melted
1 lemon, juiced
1 tablespoon chopped fresh chives
- Preheat oven to 400°F.
- Season cod with salt and
pepper and place in a shallow baking dish, large enough to hold
fish in one layer. Combine olives, butter, lemon juice and chives.
Mix well and pour over fish. Bake until fish flakes easily with
a fork, about 12 minutes. Serve warm.
