Brie Filled Whiting

Recipe Ingredients:
4 (6-ounce) whiting* fillets
1 tablespoon butter, melted
Ground black pepper to taste
2 ounces Brie, slightly softened and sliced
2 ounces fresh bread crumbs made from Ciabatta bread or similar
3 tablespoons fresh flat-leaf parsley, chopped
Zest of 1 lemon
2 tablespoons olive oil
Cooking Directions:
- Preheat oven to 400°F (205°C).
- Place fillets on a board, skinned side uppermost and brush with the melted butter. Season with pepper.
- Place 1 tablespoon cheese on top of each fillet. Roll up and place into a greased oven-proof dish. Brush with any remaining butter.
- Prepare the topping: in a small bowl, mix bread crumbs, parsley, lemon zest and olive oil together. Spoon over the fillets. Bake 20 to 25 minutes.
- Serve with a side salad.
Makes 4 servings.
*Other names for whiting fish are Alaska pollock and hake.
