Bronzed Catfish

Recipe Ingredients:
Spice Mix:
2 teaspoons paprika
2 teaspoons dried oregano
2 teaspoons dried thyme leaves
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Pinch of cayenne pepper
4 U.S. Farm-Raised Catfish fillets
2 teaspoons olive oil
1 teaspoon butter
Cooking Directions:
- For Spice Mix: In a small bowl, stir spices together until well mixed.
- Sprinkle both sides of fish with spice mixture, patting onto fillets. There may be a bit of spice mixture left over.
- Heat oil with butter, in a large non-stick frying pan, over medium-high heat. When it begins to bubble, add fillets. Cook, until fish flakes, about 4 minutes per side, and serve.
