Cajun Mackerel

Recipe Ingredients:
3 teaspoons coriander seeds
3 teaspoons allspice berries
3 teaspoons whole green peppercorns
3 teaspoons cumin seeds
3 tablespoons white vinegar
1/8 teaspoon Tabasco sauce
1/8 teaspoon Worcestershire sauce
1/8 teaspoon aromatic bitters (optional)
4 small mackerel, fresh or defrosted
2 ounces (4 tablespoons) butter
Chile flowers and/or fresh lime or lemon wedges for garnish (optional)
Cooking Directions:
- Grind spices using a pestle and mortar or place in a plastic bag and crush with a rolling pin.
- In a small bowl, mix vinegar, Tabasco, Worcestershire sauce and bitters together. Add crushed spices.
- Make 3 diagonal cuts on one side of the fish and brush with spice mixture. Marinate in refrigerator for 1 hour.
- Melt butter in a large shallow pan until sizzling. Fry the mackerel for 5 to 6 minutes until the spices have turned black. Turn fish over and cook for another 2 to 3 minutes.
- Garnish and serve with hot rolls and a crisp green salad, if desired.
Makes 4 servings.
