Cajun Style Trout

Recipe Ingredients:
4 slices thick cut bacon or peppered bacon, diced
1 cup chopped sweet or yellow onion
4 (8 to 12-ounce) Clear Springs Dressed whole trout
2 teaspoons blackened fish seasoning or Cajun seasoning blend
2 tablespoons chopped fresh flat-leaf parsley
Cooking Directions:
- Preheat oven to 350°F (175°C).
- Cook bacon in a large skillet over medium heat until crisp, stirring frequently. Use a slotted spoon to remove bacon pieces to a paper towel; set aside.
- Pour off all but 1 tablespoon of the drippings. Add onion to skillet; cook, stirring occasionally, until onion is tender and golden brown, about 8 minutes Remove from heat.
- Remove heads and/or tails from trout if desired. Sprinkle seasonings over insides of trout.
- Stir bacon and parsley into onion in skillet; spoon mixture into trout cavities.
- Arrange trout on a foil-lined or greased shallow baking sheet.
- Bake 20 minutes or until trout is cooked through (145°F | 62.7°C) internal temperature).
