Catfish Almondine

2 tablespoons butter
1 1/2 pounds catfish
1/4 cup slivered almonds
1 lemon

  1. In a 12-inch skillet over medium low heat melt 1 tablespoon butter. Saute catfish until lightly golden and flakey. Transfer to an 8-inch square pan and keep warm in a 200 F. degree oven.
  2. In the same skillet, melt remaining butter. Add slivered almonds, grated lemon peel and juice from lemon, stirring once. Remove catfish from oven. Pour the sauce over the catfish.

Makes 4 servings.
