Fish and Tomato Gratin

Recipe Ingredients:
1 pound haddock fillets, skinned
4 tomatoes, sliced
2 cloves garlic, crushed
1 tablespoon chopped fresh flat-leaf parsley
4 tablespoons shredded cheddar cheese
Salt and ground black pepper to taste
Cooking Directions:
- Preheat the oven to 375°F (190°C).
- Lay fillets in a greased oven-proof dish. Add tomatoes, garlic, parsley, salt and pepper.
- Sprinkle cheese over fish and bake 15 to 20 minutes.
- Serve with mixed salad or Jacket potatoes.
Makes 4 servings.
