Fresh Mackerel and Kumquats

Recipe Ingredients:
4 (12-ounce) whole mackerel (fresh or defrosted), cleaned and heads removed
7 ounces kumquats, sliced
Salt and ground black pepper to taste
Cooking Directions:
- Preheat grill.
- Make diagonal cuts across the skin of the fish. Fill the cut sections of the skin and the fish cavity with slices of kumquats. Rub some of the remaining kumquats over the skin of the fish for extra flavor. Season with salt and pepper.
- Cook on grill for 10 minutes each side over low heat.
- Serve with a couscous salad, if desired.
Makes 4 servings.
Tip: If preferred, orange slices may be substituted for kumquats.
