Ginger Garlic Shrimp

1 pound shrimp
3/4 cup vegetable oil
3 garlic cloves, crushed
2 green onions, chopped
1 tablespoon grated gingerroot
1/4 teaspoon salt
1/8 teaspoon ground black pepper
  1. Slit shrimp up the back with a sharp knife and remove the vein, but do not shell the shrimp. Heat oil in a wok or heavy skillet. When the oil is hot, add the shrimp and stir-fry over high heat for 2 minutes. Drain.
  2. Return oil to the skillet and heat. Add crushed garlic cloves, 2 chopped green onions, grated gingerroot, and the shrimp. Stir-fry for 20 seconds. Season with salt and pepper. Stir-fry for an additional 20 seconds.

Makes 2 servings.
