Salmon is a great source of omega-3 fatty
acids. Here, it's added to traditional taco ingredients for a
quick and nutritious meal.
Gold Rush Tacos
1 (14.75-ounce) can salmon
1 1/2 cups tomato-based salsa
1 (4-ounce) can diced green chiles drained
1 cup canned black beans, rinsed and drained
8 corn tortillas, steamed or lightly fried in oil
Toppings: Salsa, shredded lettuce, chopped
green onion, diced tomatoes, shredded cheese, olives, sliced
avocado and sour cream.
- Drain and flake salmon, removing skin
and bones if necessary; set aside.
- Combine salsa, green chiles and beans
in a large saucepan. Place over medium heat and stir until thoroughly
heated. Add salmon; stir gently until mixture is again thoroughly
heated. Transfer salmon mixture to a serving dish.
- Arrange taco shells on a platter and offer
separate bowls of toppings such as salsa, lettuce, green onion,
tomatoes, grated cheese, olives, avocado and sour cream.
