Grilled Pecan Trout

Recipe Ingredients:
2 whole trout, cleaned
lime
2 tablespoons chopped pecans
1 tablespoon dry sherry
Freshly ground black pepper
Olive oil
Cooking Directions:
- Preheat grill; line fish grill pan with foil.
- Brush foil with oil; add trout.
- Slash through skin and brush trout with oil. Drizzle with juice of lime, season; sprinkle with sherry and scatter with pecans.
- Grill for 10 minutes, turning once. Time may vary according to thickness of trout. However, it is cooked when the flesh becomes opaque and flakes easily when tested with a fork.
Makes 2 servings.
