Grilled Wahoo

Recipe Ingredients:
8 ounces tomatoes, peeled and roughly chopped
1/4 cucumber, diced
1 small onion, finely chopped
2 tablespoons medium sherry (optional)
2 tablespoons water
Salt and lemon pepper, to taste
1 pound wahoo fillets (fresh or defrosted)
Freshly chopped flat-leaf parsley, for garnish
Cooking Directions:
- Preheat grill.
- In medium saucepan, add tomatoes, cucumber, onion, sherry and water and bring to a boil. Reduce heat, cover and simmer for 10 to 15 minutes, stirring occasionally, until tomatoes and vegetables are soft. Season with salt and lemon pepper to taste.
- Place wahoo fillets onto a grill pan and sprinkle with salt and lemon pepper. Cook over a medium heat for 4 to 5 minutes, until fish is almost cooked. Turn fish.
- Divide tomato cucumber mixture, top each fillet and cook for another 1 to 2 minutes.
- Serve hot with corn on the cob and watercress, if desired.
