Grilled Wahoo

Recipe Ingredients:

8 ounces tomatoes, peeled and roughly chopped
1/4 cucumber, diced
1 small onion, finely chopped
2 tablespoons medium sherry (optional)
2 tablespoons water
Salt and lemon pepper, to taste
1 pound wahoo fillets (fresh or defrosted)
Freshly chopped flat-leaf parsley, for garnish

Cooking Directions:

  1. Preheat grill.
  2. In medium saucepan, add tomatoes, cucumber, onion, sherry and water and bring to a boil. Reduce heat, cover and simmer for 10 to 15 minutes, stirring occasionally, until tomatoes and vegetables are soft. Season with salt and lemon pepper to taste.
  3. Place wahoo fillets onto a grill pan and sprinkle with salt and lemon pepper. Cook over a medium heat for 4 to 5 minutes, until fish is almost cooked. Turn fish.
  4. Divide tomato cucumber mixture, top each fillet and cook for another 1 to 2 minutes.
  5. Serve hot with corn on the cob and watercress, if desired.

Makes 4 servings.
