Orange Roughy au Gratin

1 pound orange roughy
1 tablespoon butter
2 tablespoons chopped celery
4 green onions, sliced
2 teaspoons all-purpose flour
1/2 teaspoon seasoned salt
1/2 teaspoon lemon pepper
1/3 cup milk
1/2 cup shredded Swiss cheese

  1. Preheat oven to 350°F. Lightly grease a baking dish.
  2. Wash fish and pat dry. Place in baking dish; set aside.
  3. In a small skillet, melt butter and sauté celery and green onions for about 5 minutes. Stir in flour, seasoned salt and lemon pepper; cook for 1 minute.
  4. Gradually blend in milk. Add Swiss cheese and cook until cheese is melted. Pour sauce over fish, cover, and bake for 25 minutes, or until fish flakes easily when tested with a fork. Serve over rice or wilted greens.

Makes 3 servings.
