Pan-Seared Salmon with Kiwifruit Salsa

Recipe Ingredients:
Kiwifruit Salsa:
4 ZESPRI™GREEN kiwifruit, peeled and diced
1 cup diced avocado
1 cup diced papaya
1/4 cup diced red onion
1/4 cup chopped cilantro
2 tablespoon lime juice
1/8 teaspoon salt
Pan-Seared Salmon:
2 teaspoon lite soy sauce
1 teaspoon honey
1/2 teaspoon minced garlic
1/4 teaspoon ground ginger
1 teaspoon honey
6 (4-ounce) salmon fillets
1 tablespoon olive oil
Cooking Directions:
- For Kiwifruit Salsa: Place all kiwifruit salsa ingredients in medium bowl and toss lightly; set aside.
- For Pan-Seared Salmon: Preheat oven to 350°F (175°C).
- Whisk soy sauce, honey, garlic and ginger in small bowl. Brush salmon fillets with soy sauce mixture.
- Preheat oil in large oven-proof frying pan over medium heat. Add salmon, flesh side down and cook 1 to 2 minutes until browned. Flip salmon and place frying pan in oven.
- Bake 8 to 10 minutes or until salmon flakes easily with fork.
- Serve salmon with Kiwifruit Salsa.
