Savory Grilled Shrimp
- 1 1/2 pounds shrimp
1/4 cup olive oil
2 cloves garlic, minced
1 lemon, juiced
1 tablespoon cracked black pepper
2 tablespoons chopped fresh parsley
15 slices lean bacon
- Mix oil, garlic, lemon juice, pepper and parsley together in flat pan. Marinate shrimp in oil mixture.
- Prepare grill.
- Cut excess fat off ends of bacon slices. Wrap a slice of bacon around each shrimp and fasten with a wooden pick.
- Grill shrimp on medium heat for 5 minutes, turning and basting once. Shrimp are done when opaque throughout. Do not over cook. Discard bacon, if desired.
Makes 4 servings.
