A rich creamy elegant dish that is usually served over toast points.

Shrimp Newburg

2 tablespoons butter
2 tablespoons all-purpose flour
1 onion, peeled and chopped
1 cup milk
2 pounds shrimp, peeled and deveined
2 teaspoons beef base or instant bouillon granules
1/3 cup hot water
1/4 cup chopped green onions
2 tablespoons Worcestershire sauce
1 teaspoon chopped pimiento
1/2 teaspoon dry mustard
1/8 teaspoon hot pepper sauce
1 large egg, beaten
1/2 cup whipping cream
  1. Melt butter in a large saucepan; add flour and cook until bubbly. Stir in onion and cook until onion is soft, about 1 minute. Add milk and cook until the sauce thickens.
  2. Stir in shrimp, beef base, green onions, Worcestershire sauce, pimiento, dry mustard and hot pepper sauce.
  3. Stir in beaten egg and cream; heat thoroughly, but do not allow to boil. Serve hot.

Makes 6 servings.
