A rich creamy elegant dish that is usually served over toast points.
Shrimp Newburg
- 2 tablespoons butter
2 tablespoons all-purpose flour
1 onion, peeled and chopped
1 cup milk
2 pounds shrimp, peeled and deveined
2 teaspoons beef base or instant bouillon granules
1/3 cup hot water
1/4 cup chopped green onions
2 tablespoons Worcestershire sauce
1 teaspoon chopped pimiento
1/2 teaspoon dry mustard
1/8 teaspoon hot pepper sauce
1 large egg, beaten
1/2 cup whipping cream
- Melt butter in a large saucepan; add flour and cook until bubbly. Stir in onion and cook until onion is soft, about 1 minute. Add milk and cook until the sauce thickens.
- Stir in shrimp, beef base, green onions, Worcestershire sauce, pimiento, dry mustard and hot pepper sauce.
- Stir in beaten egg and cream; heat thoroughly, but do not allow to boil. Serve hot.
Makes 6 servings.
