Spiced Halibut Steaks

Recipe Ingredients:
8 ounces halibut steaks (fresh or defrosted)
2 tablespoons sunflower oil
1 small onion, finely chopped
1 tablespoon red and green chili pepper, seeded and thinly sliced
2 tablespoons curry powder
1/2 teaspoon ground cumin
2 tablespoons lemon juice
Salt and ground black pepper to taste
Fresh lemon wedges for garnish (optional)
Cooking Directions:
- Heat oil in a pan. Add onion, chiles, curry, cumin, salt and pepper and cook 2 to 3 minutes. Add lemon juice.
- Place steaks in a dish and brush with the spice mixture. Cover and leave to marinate in refrigerator 1 to 2 hours.
- Preheat grill.
- Place steaks on a grill pan and cook under a moderate to hot grill for 10 to 12 minutes, turning once. Brush with the remaining marinade.
- Serve hot with a selection of vegetables such as new potatoes and green beans. Garnish with lemon wedges, if desired.
Makes 2 servings.
