Steamed Ginger Cod

2 pounds cod
1 ounce gingerroot
5 green onions, sliced
1 tablespoon soy sauce
5 tablespoons sherry
2 teaspoons peanut oil

  1. Rinse cod in cold water and pat dry. Place in a steamer dish.
  2. Peel ginger root and slice into julienne strips. Sprinkle the ginger over the fish with sliced green onions. Combine soy sauce, sherry, and peanut oil; pour over the fish. Marinate for 10 minutes.
  3. Add water to the steamer and bring to a boil. Cover tightly and steam for 10 to 15 minutes, or until the fish flakes easily. Do not overcook.

Makes 8 servings.
