Leftover rice from a meal? Give it a twist with this Almond-infused recipe. Serve along side of Cerdo con Frutas (Pork Chops with Fruit) or under Simple Pork Stir Fry.

Almond Rice

2 teaspoons olive oil
1/2 cup slivered almonds
1 tablespoon almond liqueuer
2 cups rice, cooked
1/4 cup green onions, minced
  1. Heat oil in skillet; add almonds and saute just until golden. Add liqueuer and rice to skillet. Stir until heated. Add onions; stir to mix well.

Makes 4 servings.
