A unique way to serve sweet potatoes at your holiday gatherings! Served with roast turkey, chicken or pork, these are sure to be the start of a new family tradition.
Apple-Filled Sweet Potato Nests
- 1 (12-ounce) STOUFFER'S® Harvest Apples, defrosted according to package directions
1 (22-ounce) can sweet potatoes or yams, drained
2 large eggs
2 tablespoons butter
1 tablespoon granulated sugar
1/2 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
- Preheat oven to 400°F. Lightly grease a baking sheet.
- Whip sweet potatoes until smooth in a large mixing bowl. Add eggs, butter, sugar, vanilla extract and nutmeg; beat until well combined. Season to taste with salt.
- Spoon mixture onto prepared baking sheet, forming 6 mounds, 2 inches apart. Make a depression in each mound using back of a spoon to form a shell. Fill centers of shells with escalloped apples.
- Bake for 30 minutes.
