Apple Rice
Curry
- 1/2 cup raisins
1/2 cup boiling water
1/2 cup chopped onion
1/2 teaspoon curry powder
1/8 teaspoon ground black pepper
2 tablespoons butter or margarine
3 cups cooked rice (cooked in chicken broth)
2 tart cooking apples, peeled, cored and chopped
- Add water to raisins;
set aside.
- Cook onion, curry powder
and pepper in butter in large skillet until onion is soft but
not brown. Add rice and apples; heat thoroughly.
- Drain raisins and stir
into rice.
