A layered casserole of feathery-light dumplings combined with cheese, butter and onions makes for a hearty side dish.

Cheese and Onion Spaetzle

1 (10.5-ounce) package spaetzle mix, cooked, drained and kept warm (or see Spaetzle recipe)
2 tablespoons butter or margarine
1 small onion, sliced
1 cup (4-ounce) shredded Swiss cheese
  1. Preheat oven to 375º F.
  2. Melt butter in small skillet over medium-high heat. Add onion; cook for 3 to 4 minutes or until tender. Arrange layers of spaetzle, onion and cheese in 8-inch-square baking dish.
  3. Bake for 25 to 30 minutes or until cheese is melted.

Makes 6 to 8 servings.
