Colcannon (Irish Mashed Potatoes)

Recipe Ingredients:
2 pounds potatoes, freshly cooked and mashed
1/2 pound kale, just cooked, drained and finely chopped*
1/2 cup milk, or to desired consistency
1/4 cup butter
Salt and ground black pepper to taste
Cooking Directions:
- Mix potatoes, kale (or green onions) together.
- Heat some milk with the butter and beat it into the potato mixture until smooth and creamy.
- Season to taste with salt and pepper.
Makes 4 servings.
*Or 1 bunch of green onions (spring onions) finely chopped.
