Gingered Snow Peas

1 pound fresh snow peas (or 1 (12-ounce) package frozen snow peas, thawed)
2 teaspoons vegetable oil
1 garlic clove, crushed
1 teaspoon grated ginger
2 tablespoons dry sherry
  1. Clean snow peas, trimming if necessary. Heat oil in large skillet over medium heat. Stir in snow peas, garlic and ginger. Sauté for 2 minutes, until peas are tender. Toss with sherry.
