Here's a tasty side dish with lots of interest that won't overpower your next Mexican entrée. This makes a substantial portion so it is perfect for a large gathering or potluck supper.

Green Chile Rice Pilaf

1 pound mushrooms, thinly sliced
1/2 cup chopped onion
1/4 cup butter or margarine
3 1/2 cups uncooked white rice
7 cups chicken broth
1 can (4-ounce) ORTEGA® Diced Green Chiles
  1. COOK mushrooms, onion and butter in large saucepan over medium heat until tender. Add rice; cook for 5 minutes. Add broth and chiles; bring to a boil. Cook for 20 minutes or until moisture is absorbed and rice is tender. Fluff with fork before serving. Reduce heat to low; cover.
