Mama's Sweet Potato Poon
- 1 1/2 cups dark brown sugar, firmly packed
- 1/2 cup butter, melted
- 1 large egg
- 8 cups coarsely shredded sweet potatoes
- 1/2 cup black molasses
- 1/2 cup self-rising flour
- 1/4 cup milk
- 1/2 cup sweetened shredded coconut
- 1/2 cup dark or golden raisins
- 1 tablespoon vanilla extract
- 2 teaspoons ground allspice
- 1 teaspoon ground cinnamon
- Preheat the oven to 350 degrees. Grease
a 2-quart casserole dish.
- In a large bowl, cream together the brown
sugar and butter. Beat in the egg. Add the remaining ingredients
and mix until combined.
- Pour the mixture into the prepared dish
and bake for 1 1/2 hours or until browned.
Makes 8 to 10 servings.
