Mama's Sweet Potato Poon
This old-time Southern side dish, a rich sweet potato pudding made with molasses, coconut and raisins, is sure to please.
Recipe Ingredients:
1 1/2 cups dark brown sugar, firmly packed
1/2 cup butter, melted
1 large egg
8 cups coarsely shredded sweet potatoes
1/2 cup black molasses
1/2 cup self-rising flour
1/4 cup milk
1/2 cup sweetened shredded coconut
1/2 cup dark or golden raisins
1 tablespoon vanilla extract
2 teaspoons ground allspice
1 teaspoon ground cinnamon
Cooking Directions:
- Preheat the oven to 350°F (175°C). Grease a 2-quart casserole dish.
- In a large bowl, cream together the brown sugar and butter. Beat in the egg. Add the remaining ingredients and mix until combined.
- Pour the mixture into the prepared dish and bake for 1 1/2 hours or until browned.
Makes 8 to 10 servings.
