Pine Nut and Orange Wild Rice

1 cup golden raisins
1/2 cup water
1 (6-ounce) package long-grain and wild rice
1/2 cup pine nuts, toasted
2 tablespoons chopped fresh parsley
2 to 4 tablespoons extra virgin olive oil
2 tablespoons grated orange rind
2 tablespoons orange juice
1/4 teaspoon freshly ground pepper
Freshly grated Parmesan cheese
  1. Combine raisins and water in a small saucepan. Bring to a boil; cover, reduce heat, and simmer 3 minutes. Remove from heat, and let cool. Drain and set aside.
  2. Cook rice according to package directions. Combine rice, reserved raisins, pine nuts, and next 5 ingredients in a medium bowl; stir well. Sprinkle with Parmesan cheese. Serve immediately.

Makes 6 to 8 servings.
