Potatoes Au Gratin

Potatoes Au GratinEverybody loves cheesy potatoes. Whether you serve these up at a holiday meal or a weeknight dinner, they are always a welcome potato side dish.

Recipe Ingredients:

2 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups half-and-half (light cream) or milk
Salt and ground black pepper to taste
1 1/2 pounds small new red potatoes, par-cooked in salted water and sliced 1/4-inch thick
1/2 to 1 cup shredded cheddar cheese
1/2 to 1 cup shredded Monterey Jack cheese

Cooking Directions:

  1. Preheat oven to 400°F (205°C). Grease a 12x7-inch baking dish.
  2. Melt butter in medium saucepan over medium heat. Stir in flour; cook for 2 minutes. Whisk in milk. Cook, stirring occasionally, for 4 to 6 minutes or until mixture slightly thickens. Remove from heat and season to taste with salt and pepper.
  3. Add potatoes to sauce; stir gently to coat. Pour into prepared dish. Sprinkle evenly with the cheeses.
  4. Bake for 15 minutes or until golden brown and bubbly.

Makes 4 servings. (Recipe may be doubled and baked in a 13x9x2-inch baking dish.)
