New potatoes are livened up in this simple side dish. Goes well with grilled dishes like America's Favorite Pork Chops or roasted dishes like Roasted Peppered Pork Loin.

Speckled Potatoes

6 medium red potatoes, peeled and thinly sliced
1/2 cup minced onion
1 garlic clove, minced
1 chicken bouillon cube
1/2 cup chopped parsley
  1. In large saucepan with 1 inch of water, combine potatoes, onions, garlic and bouillon cube. Cover and cook 10 minutes.
  2. Add parsley; cook 5 minutes more, or until potatoes are tender; drain.

Serves 6.
