Squash Fritters

1 (10-ounce) package frozen slice yellow squash
2 eggs, beaten
1/2 cup cracker crumbs
1/4 teaspoon pepper
1 small onion, finely chopped
Vegetable oil
  1. Cook squash according to package directions; drain and mash.
  2. Combine squash and next 4 ingredients.
  3. Pour oil to a depth of 2-inches in a deep-fat fryer or heavy saucepan; heat to 375*F (190*C).
  4. Drop squash mixture by tablespoonfuls into hot oil (do not crowd pan); fry until golden brown, turning once. Drain on paper towels. Serve immediately.

Makes 10 fritters.
