Here's a fun way to introduce this nutritious veggie to the kids. A pizza always gets their attention. Sprinkle with marshmallows and cinnamon instead of sugar for a variation.

Sweet Potato Pizza

4 to 5 cups thinly sliced fresh sweet potatoes (yams)
1/4 cup packed light brown sugar
1 teaspoon ground cinnamon
1/4 ground nutmeg
  1. Preheat oven to 400 degrees F.
  2. Coat a 12-inch pizza pan with nonstick cooking spray.
  3. Arrange sweet potato slices to cover the pizza pan, overlapping the slices. Spray the slices with nonstick cooking spray. Bake 15 minutes.
  4. In a small bowl, mix together brown sugar, cinnamon, and nutmeg and sprinkle evenly over potato slices. Return to oven and continue baking until the potato slices are tender.

Makes 6 to 8 servings.
