Calico Bean Soup

1/4 pound dried black beans
1/4 pound dried kidney beans
1/4 pound dried navy beans
1/4 pound dried white beans
1 clove garlic, crushed
1 teaspoon ground cumin
1 (28-ounce) can whole tomatoes, undrained
2 tablespoons lemon juice

  1. In a stockpot combine black beans, kidney beans, navy beans and white beans. Cover with water and soak overnight.
  2. Drain beans, rinse, and cover with fresh water. Bring to a boil, reduce heat, and simmer for 2 hours.
  3. Add garlic, cumin, tomatoes with liquid, and lemon juice. Simmer for 1 hour or until beans are tender.

Makes 8 servings.
