Cream of
Asparagus Soup
1 red onion, sliced
1 tablespoon butter
2 tablespoons all-purpose flour
3 tablespoons NESTLÉ® CARNATION® Nonfat Dry Milk
1 (12-ounce) can NESTLÉ® CARNATION® Evaporated
Milk
1 1/2 cups milk
1 pound asparagus, chopped
1/4 cup sherry
- In a saucepan over medium heat, saute
sliced red onion in butter until soft. Stir in flour and powdered
milk; cook until bubbly.
- Gradually add evaporated milk and milk,
mixing well. Add chopped asparagus and bring to a boil. Reduce
the heat and simmer until the carrots are tender, about 10 minutes.
- Place the soup in a food processor or
blender and puree until smooth. Stir in sherry.
