Cream of Carrot Soup

1 red onion, sliced
1 tablespoon butter
2 tablespoons all-purpose flour
3 tablespoons NESTLÉ® CARNATION® Nonfat Dry Milk
1 (12-ounce) can NESTLÉ® CARNATION® Evaporated Milk
1 1/2 cups milk
1 pound carrots, peeled and grated
1 teaspoon dried thyme

  1. In a saucepan saute sliced red onion in butter over medium heat until soft. Stir in flour and powdered milk and cook until bubbly. Gradually add evaporated milk and milk, mixing well.
  2. Add grated carrots and bring to a boil. Reduce heat and simmer until the carrots are tender, about 10 minutes.
  3. Place the soup in a food processor or blender and puree until smooth. Stir in thyme.
