Cream of
Carrot Soup
1 red onion, sliced
1 tablespoon butter
2 tablespoons all-purpose flour
3 tablespoons NESTLÉ® CARNATION® Nonfat Dry Milk
1 (12-ounce) can NESTLÉ® CARNATION® Evaporated
Milk
1 1/2 cups milk
1 pound carrots, peeled and grated
1 teaspoon dried thyme
- In a saucepan saute sliced red onion in
butter over medium heat until soft. Stir in flour and powdered
milk and cook until bubbly. Gradually add evaporated milk and
milk, mixing well.
- Add grated carrots and bring to a boil.
Reduce heat and simmer until the carrots are tender, about 10
minutes.
- Place the soup in a food processor or
blender and puree until smooth. Stir in thyme.
