Refreshing cucumber soup is updated with the addition of a lush avocado. Garnish this chilled soup with a couple mint leaves.

Cucumber-Avocado Bisque

1 cucumber, peeled, seeded and cut in chunks
1 cup chicken broth
1 cup sour cream
1/2 avocado, pitted and peeled
3 green onions, chopped
2 tablespoons lemon juice
1/4 teaspoon salt
1/8 teaspoon paprika
  1. In a food processor or blender, combine cucumber, chicken broth, sour cream, avocado, green onion, lemon juice, salt and paprika; process just until smooth. Cover and chill until ready to serve.

Makes 4 servings.
