Lusciously meaty cream
of mushroom soup with a touch of sherry -- a great starter to
a wonderful dinner.
Fresh Mushroom
Soup with Sherry
1 pound mushrooms, cleaned
and sliced
2 cups water
2 cups NESTLÉ® CARNATION® Nonfat Dry Milk
1 teaspoon dried onion flakes
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon all-purpose flour
1 tablespoon sherry
- Coat a heavy skillet with vegetable cooking
spray; add mushrooms and sauté quickly until just tender.
- Combine water, powdered milk, onion flakes,
parsley, flour and sherry in a blender or food processor; process
until thick and foamy. Add mushrooms and blend again at lowest
speed for 4 to 5 seconds or until mushrooms are chopped into
fine pieces but not puréed.
- Return mixture to saucepan and heat slowly,
stirring with a wire whisk to keep from sticking. Heat thoroughly
but do not boil. Serve with additional parsley.
