A microwave recipe.

Lakeshore Wild Rice and Chicken Soup

1 tablespoon butter or margarine
1/2 cup chopped onion
1/2 cup chopped celery
1 carrot, peeled and diced
5 cups chicken broth
3/4 cup wild rice mix
1 bay leaf
1/2 teaspoon dried thyme
2 cups chopped cooked chicken (or turkey)
1/8 teaspoon ground black pepper

  1. Combine butter, chopped onion, chopped celery, and diced carrot in a microwave-safe baking dish. Cover and microwave on high for 5 minutes, or until the vegetables are soft.
  2. Stir in chicken broth, wild rice mix, bay leaf, and thyme. Cover and microwave on high for 6 minutes, reduce the setting, and microwave on medium for 8 minutes.
  3. Add chopped chicken and pepper; heat through.

Makes 4 servings.
