Tomato bean soup hits the spot any time of year; seasoned with mild salsa and taco seasoning this soup is served elegantly finished with grated Mexican cheese blend.

Mexican-Style Tomato Bean Soup

3 cups tomato juice
1 (16-ounce) can ORTEGA® Refried Beans
1 (16-ounce) jar ORTEGA Salsa - Homestyle Recipe (Mild)
1 cup water
1 (1.25-ounce) package ORTEGA® Taco Seasoning Mix
2 cups shredded four-cheese Mexican blend, divided use
Garnish suggestions: tortilla chips, croutons, sour cream and cooked, crumbled bacon
  1. Combine juice, beans, salsa, water and seasoning mix in large saucepan. Bring to a boil. Reduce heat to low; cook, stirring occasionally, for 10 to 15 minutes. Remove from heat; stir in 1/2 cup cheese. Top with remaining cheese and garnish as desired.

Makes 8 servings.
